Lemon cheesecake

So easy for little chefs to help out with this cheesecake. Smashing up the biscuits… melting the butter… stirring it together…squishing it into tin… chasing the escapee crumbs. Such lovely memories. This cheesecake often turned out a fabulously rock-hard chocolatey base that would send dad’s slice flying off the side of his plate when he tried to cut into it. Funny and delicious. Being served in the Bird house for at least 50 years. Thank you Mum!
