Sometimes the simple things are the best. What a great breakfast – a warm boiled egg, oozing bright yolk with buttered seedy bread or soldiers. And of course a little pinch of salt. Yummy.
Has anyone else noticed that egg shells are getting thinner and thinner? In Bergamo we refrigerate our eggs and in EG eggs are kept at room temp. Standard cooking time for two eggs would be 5 mins fresh, 6 mins refrigerated.
Ingredients
2 eggs
2 slices of bread
Salted butter
Salt
Fill a small saucepan with water and bring to the boil. Carefully lower the eggs into the water taking care not to crack the shell. Boil for 5/6 minutes.
Make your toast. Butter warm. Slice into tall dipping soldiers.
Retrieve the boiled eggs. Move to eggcups
Decapitate to your satisfaction.
Sprinkle of salt on the runny yolk.
Enjoy.
