Uncle’s Dundee cake

Leading up to Christmas, Uncle Eric would have a pantry full of insanely heavy cake tins. Inside each tin was an upside down Dundee cake. He would make one for every family within the family, carefully taking the time to make sure each one was well and truly laced and revealing a beautiful and enormous traditional cake to share on Christmas Day. He put a lot of love into those cakes. As a child, I didn’t care for the rich flavour or texture of this cake, but I was impressed that a cake could last for so long! To me as an adult this cake is a symbol of his kindness, generosity and loyalty to his family. Eric never married or had children of his own. I see this cake as one way that he showed how much he loved and valued being part of our family. We loved you too. Thank you Uncle.
